Where it makes sense
The Everest 2X suits campers who want a substantial tabletop cooking platform for a menu built around two active burners. Camp Chef lists two 20,000-BTU burners and a 215-square-inch cooking area. Those specifications describe rated input and available area, not a guarantee that a particular dinner will cook faster. The useful buying test is whether your two pans sit securely with room to reach both controls. This is a kitchen to carry from the vehicle and set up deliberately. It makes less sense when the entire trip menu needs only a small quantity of boiling water or when storage volume is very constrained.
The tradeoff
Higher rated output does not settle simmer quality, pan fit, or real fuel consumption
